Salmon Bowl

Ingredients

Bowl Ingredients

  • 2 portions salmon
  • 2 servings rice of choice
  • 1/2 large cucumber
  • 1 avocado
  • chopped green onions for topping
  • sliced radishes optional (for color)
  • 1 lime
  • 1 package seaweed crisps

Salmon Glaze

  • 1 tbsp mayo
  • 1 tbsp hot honey (or regular honey with a pinch of cayenne pepper)
  • 1/2 tbsp soy sauce
  • 2 cloves minced garlic or 1 tbsp

Poke Sauce

  • 1/4 cup soy sauce
  • 1 tsp rice vinegar
  • 1 tbsp hot honey
  • 1 tsp garlic powder
  • 1 tsp crushed red pepper flakes

Sriracha Mayo

  • 2 tbsp mayo
  • 1 tbsp sriracha

Instructions

  • Cook rice according to package.
  • Cut salmon into 1" cubes. Mix Salmon Glaze. Toss salmon cubes and the glaze together in a medium sized bowl.
  • Air fry salmon at 350 for 13-14 minutes.
  • Chop cucumber & green onions. Slice avocado, radishes and lime wedges.
  • Mix poke sauce ingredients together in a small bowl. Mix mayo and sriracha together in a separate bowl. (I like to use a ziploc to mix the sriracha mayo so I can cut the corner and drizzle it!)
  • Assemble bowls (rice -> salmon -> veggies -> drizzle sauces -> add toppings.) Top with sesame seeds and enjoy!
