Mini Bagel Breakfast Sandwiches

Ingredients

  • 1 bag everything bagel mini bagels
  • 1 lb breakfast sausage
  • 6 eggs
  • 1/4 cup shredded cheese
  • 1 tbsp everything bagel seasoning
  • salt & pepper to taste
  • sriracha optional

Instructions

  • Divide breakfast sausage into 6-8 small patties.
  • Cook in a large pan with oil for about 5 minutes on each side or until cooked through.
  • Add eggs, cheese and seasonings to a large bowl and whisk to combine.
  • Add egg mixture to a greased muffin tin, filling about a third of the way. (They will puff up!)
  • Bake at 350 degrees for 18-22 minutes.
  • Separate bagels and lay on a large baking sheet. Spray with cooking oil and toast in the oven for a few minutes until slightly browned.
  • Assemble breakfast sandwiches! I added sriracha.
  • Wrap individually in foil and store in the refrigerator or freezer.

Notes

*Re-heating Instructions:
If refridgerated: microwave for 45 seconds to 1 minute.
If frozen: wrap in a damp paper towel and microwave for about 1 minute 15 seconds.
