Divide breakfast sausage into 6-8 small patties.
Cook in a large pan with oil for about 5 minutes on each side or until cooked through.
Add eggs, cheese and seasonings to a large bowl and whisk to combine.
Add egg mixture to a greased muffin tin, filling about a third of the way. (They will puff up!)
Bake at 350 degrees for 18-22 minutes.
Separate bagels and lay on a large baking sheet. Spray with cooking oil and toast in the oven for a few minutes until slightly browned.
Assemble breakfast sandwiches! I added sriracha.
Wrap individually in foil and store in the refrigerator or freezer.
