Cinnamon Crumble Banana Bread / Gluten & Dairy Free

Ingredients

Wet Ingredient Mixture

  • 3 ripe, spotted bananas
  • 1/3 cup unsalted regular or dairy free butter melted
  • 1/2 cup brown sugar
  • 2 tsp vanilla extract
  • 2 tbsp dairy free milk *I recommend adding 1/2 tsp lemon juice or vinegar to create "buttermilk"

Dry Ingredients

  • 1 3/4 cup gluten free All-Purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon

Crumble

  • 1/4 cup white sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 3 tbsp melted butter
  • 1/3 cup gluten free AP flour **depending on flour brand, you may need to add a few tbsp of flour to thicken the crumble.

Instructions

  • Preheat oven to 350 degrees.
  • Mash bananas in a large bowl. Add melted butter, brown sugar, vanilla and milk and mix together.
  • In a separate bowl, mix together flour, baking soda, baking powder, salt, and cinnamon.
  • Add the dry ingredient mixture to the the wet ingredient mixture 1/3 cup at a time and mix until combined.
  • Add batter to a greased or lined loaf pan.
  • In a small bowl, mix all crumble ingredients - add more flour if needed.
    Add the crumble mixture across the top of the bread batter with your fingers.
  • Bake at 350 for 45-50 minutes!

Optional Glaze

  • 1/4 cup powdered sugar
  • 1 tsp dairy free milk
