Chocolate Chip Protein Bars

Ingredients

Base Ingredients:

  • 1 1/2 cup almond or peanut butter I used almond!
  • 1/2 cup vanilla protein powder
  • 1/2 cup oat flour (just blend 1/2 cup rolled oats - or you can sub almond flour)
  • 1/4 cup maple syrup
  • 1/4 cup chocolate chips

Topping:

  • 1/2 cup chocolate chips
  • 1 tsp coconut or avocado oil
  • 1 pinch sea salt optional

Instructions

  • Add nut butter, protein powder, oat flour & maple syrup to a bowl and mix until just combined.
  • Fold in chocolate chips.
  • Line a baking dish or container with parchment paper.
  • Add base to container and press with your fingers to create an even layer.
  • Add chocolate chips and oil to a microwave safe container and microwave in 25 second intervals until melted. (Stirring after each interval)
  • Add melted chocolate on top of the base mixture and smooth.
  • Refridgerate for 25-30 minutes & enjoy!
