Beef Stir Fry

Ingredients

  • 1 lb skirt steak
  • 1 cup broccoli fresh or frozen
  • 1 small zucchini cut into large pieces
  • 1/2 onion
  • 1 large bell pepper cut into slices
  • 2 tbsp corn starch + water to make a slurry
  • Jasmine rice I use microwavable rice

Sauce:

  • 3/4 cup chicken broth or bone broth
  • 1/4 cup soy sauce
  • 1 tbsp brown sugar
  • 1 tsp sesame oil
  • 1 tsp grated ginger or 1/2 tsp ground ginger
  • 3 cloves garlic minced
  • Juice of 1 lime
  • 1/2 tsp crushed red pepper

Instructions

  • Prepare rice if needed.
  • Roughly chop bell pepper, broccoli, zucchini, onion. Mince garlic.
  • Slice skirt steak if not pre-sliced!
  • Set veggies aside and prepare stir fry sauce.
  • In a large pan on medium heat, add olive oil and beef. Brown for about 6 minutes or until medium/well done.
  • Remove beef and add veggies to the pan. Cook covered for about 5 minutes, stirring occasionally.
  • Once veggies are cooked through, add in stir fry sauce and reduce heat to low.
  • Mix cornstarch with water until it creates a slurry. Add to the sauce/veggie mixture and stir until sauce thickens.
  • Add beef back in and simmer until ready to plate.
  • Add stir fry over rice and top with sesame seeds.
