Banana Oat Protein Muffins
One of my favorite breakfast meal prep recipes! Can be made gluten or dairy free.

Ingredients
Muffins:

Ripe Bananas

Kodiak Frontier Oat Pancake Mix

milk

brown sugar
can sub coconut sugar
1/4
cup
melted butter
Crumble Topping
2
tbsp
brown sugar
1/4
cup
rolled oats
1/2
tsp
cinnamon
2
tbsp
cold butter
Instructions
Preheat oven to 350 degrees.
Add bananas to a mixing bowl and mash.
Add pancake mix, milk, brown sugar, and butter. Mix until combined.
Add all crumble ingredients to a small bowl and mix with your hands to combine.
Spray muffin pan with cooking spray or line with muffin liners.
Add batter to muffin pan filling about 3/4 of the way.
Sprinkle crumble on top of each muffin.
Bake at 350 degrees for 16-18 minutes.
Notes
Store in the refrigerator or freezer. Reheat in microwave or air fryer.
