These easy & healthy meatballs are a staple dinner in my house! These bowls make a great weeknight dinner, or would be great to meal prep for the week! When I meal prep these meatballs, I will typically sub the rice noodles for brown or jasmine rice. This is one of my favorite dinner recipes & I hope you enjoy it!

Sweet Chili Chicken Meatball Bowls
Healthy & delicious chicken meatballs with rice noodles and veggies.
Ingredients
Meatballs:
- 1 lb ground chicken
- 1/2 cup plain breadcrumbs
- 1/2 cup chopped red bell pepper
- 2 tbsp chopped green onion
- 2 tbsp sweet chili sauce
- 2 cloves minced garlic
Sweet Chili Lime Glaze
- 1 tbsp soy sauce
- juice of 1 lime
- 1 clove minced garlic
- 2 tbsp sweet chili sauce
- 2 tbsp hot water
Noodles & Veggies
- 1 package rice noodles
- broccolini sauted
- Optional: thinly sliced cucumber
- sliced radishes
Instructions
- Add all meatball ingredients to a large mixing bowl and thouroughly combine.
- Form meatballs into golf ball sized balls.
- Saute meatballs in a skillet with oil over medium heat until fully cooked. (about 12-15 minutes flipping occasionally)
- Remove meatballs and toss in more sweet chili sauce.
- Prepare rice noodles according to package.
- Saute broccolini in a small amount of oil and season with salt and garlic powder.
- Slice veggies for topping.
- Prepare bowls and top with sweet chili lime glaze.
- Optional: Top with more green onions and sesame seeds.
