Sweet Chili Chicken Meatball Bowls

These easy & healthy meatballs are a staple dinner in my house! These bowls make a great weeknight dinner, or would be great to meal prep for the week! When I meal prep these meatballs, I will typically sub the rice noodles for brown or jasmine rice. This is one of my favorite dinner recipes & I hope you enjoy it!

Sweet Chili Chicken Meatball Bowls

Healthy & delicious chicken meatballs with rice noodles and veggies.

Ingredients

Meatballs:

  • 1 lb ground chicken
  • 1/2 cup plain breadcrumbs
  • 1/2 cup chopped red bell pepper
  • 2 tbsp chopped green onion
  • 2 tbsp sweet chili sauce
  • 2 cloves minced garlic

Sweet Chili Lime Glaze

  • 1 tbsp soy sauce
  • juice of 1 lime
  • 1 clove minced garlic
  • 2 tbsp sweet chili sauce
  • 2 tbsp hot water

Noodles & Veggies

  • 1 package rice noodles
  • broccolini sauted
  • Optional: thinly sliced cucumber
  • sliced radishes

Instructions

  • Add all meatball ingredients to a large mixing bowl and thouroughly combine.
  • Form meatballs into golf ball sized balls.
  • Saute meatballs in a skillet with oil over medium heat until fully cooked. (about 12-15 minutes flipping occasionally)
  • Remove meatballs and toss in more sweet chili sauce.
  • Prepare rice noodles according to package.
  • Saute broccolini in a small amount of oil and season with salt and garlic powder.
  • Slice veggies for topping.
  • Prepare bowls and top with sweet chili lime glaze.
  • Optional: Top with more green onions and sesame seeds.
