My favorite breakfast meal prep! These mini bagel breakfast sandwiches are the perfect grab and go breakfast. They are even freezer friendly!


Mini Bagel Breakfast Sandwiches
Refridgerator & freezer friendly breakfast meal prep!
Ingredients
- 1 bag everything bagel mini bagels
- 1 lb breakfast sausage
- 6 eggs
- 1/4 cup shredded cheese
- 1 tbsp everything bagel seasoning
- salt & pepper to taste
- sriracha optional
Instructions
- Divide breakfast sausage into 6-8 small patties.
- Cook in a large pan with oil for about 5 minutes on each side or until cooked through.
- Add eggs, cheese and seasonings to a large bowl and whisk to combine.
- Add egg mixture to a greased muffin tin, filling about a third of the way. (They will puff up!)
- Bake at 350 degrees for 18-22 minutes.
- Separate bagels and lay on a large baking sheet. Spray with cooking oil and toast in the oven for a few minutes until slightly browned.
- Assemble breakfast sandwiches! I added sriracha.
- Wrap individually in foil and store in the refrigerator or freezer.
Notes
*Re-heating Instructions:
If refridgerated: microwave for 45 seconds to 1 minute.
If frozen: wrap in a damp paper towel and microwave for about 1 minute 15 seconds.
