Cinnamon Crumble Banana Bread / Gluten & Dairy Free
The best banana bread ever!
Ingredients
Wet Ingredient Mixture
- 3 ripe, spotted bananas
- 1/3 cup unsalted regular or dairy free butter melted
- 1/2 cup brown sugar
- 2 tsp vanilla extract
- 2 tbsp dairy free milk *I recommend adding 1/2 tsp lemon juice or vinegar to create "buttermilk"
Dry Ingredients
- 1 3/4 cup gluten free All-Purpose flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
Crumble
- 1/4 cup white sugar
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 3 tbsp melted butter
- 1/3 cup gluten free AP flour **depending on flour brand, you may need to add a few tbsp of flour to thicken the crumble.
Instructions
- Preheat oven to 350 degrees.
- Mash bananas in a large bowl. Add melted butter, brown sugar, vanilla and milk and mix together.
- In a separate bowl, mix together flour, baking soda, baking powder, salt, and cinnamon.
- Add the dry ingredient mixture to the the wet ingredient mixture 1/3 cup at a time and mix until combined.
- Add batter to a greased or lined loaf pan.
- In a small bowl, mix all crumble ingredients – add more flour if needed. Add the crumble mixture across the top of the bread batter with your fingers.
- Bake at 350 for 45-50 minutes!
Optional Glaze
- 1/4 cup powdered sugar
- 1 tsp dairy free milk
