This beef stir fry makes the easiest dinner! It’s healthy and super easy to customize with your favorite veggies. We are making our own stir fry sauce here, but feel free to use a pre-made stir fry sauce if you prefer. Hope you enjoy this one!

Beef Stir Fry
30 Minute Easy Weeknight Dinner!
Ingredients
- 1 lb skirt steak
- 1 cup broccoli fresh or frozen
- 1 small zucchini cut into large pieces
- 1/2 onion
- 1 large bell pepper cut into slices
- 2 tbsp corn starch + water to make a slurry
- Jasmine rice I use microwavable rice
Sauce:
- 3/4 cup chicken broth or bone broth
- 1/4 cup soy sauce
- 1 tbsp brown sugar
- 1 tsp sesame oil
- 1 tsp grated ginger or 1/2 tsp ground ginger
- 3 cloves garlic minced
- Juice of 1 lime
- 1/2 tsp crushed red pepper
Instructions
- Prepare rice if needed.
- Roughly chop bell pepper, broccoli, zucchini, onion. Mince garlic.
- Slice skirt steak if not pre-sliced!
- Set veggies aside and prepare stir fry sauce.
- In a large pan on medium heat, add olive oil and beef. Brown for about 6 minutes or until medium/well done.
- Remove beef and add veggies to the pan. Cook covered for about 5 minutes, stirring occasionally.
- Once veggies are cooked through, add in stir fry sauce and reduce heat to low.
- Mix cornstarch with water until it creates a slurry. Add to the sauce/veggie mixture and stir until sauce thickens.
- Add beef back in and simmer until ready to plate.
- Add stir fry over rice and top with sesame seeds.
