
These banana oat protein muffins are the perfect weekday breakfast! I like to meal prep these and keep in the fridge for the week! I also love to add blueberries or chopped strawberries to these if I have them on hand. Hope you love them!
Ingredients:
Protein Pancake Mix: I used the Kodiak Cakes Frontier Oat pancake mix for these! It already has oats in it & has an amazing cinnamon flavor. If you are not gluten free, the Cinnamon Oat flavor will also work great.
Spotty Bananas: Ripe bananas add the perfect sweetness.
Milk: Any dairy or non-dairy milk will work for this.
Brown Sugar: You can also sub this with coconut sugar!
Butter: Use unsalted butter or coconut oil!
Crumble Topping: Brown sugar, rolled oats, cinnamon & cold butter.

Banana Oat Protein Muffins
Equipment
- Muffin Pan
Ingredients
Muffins:
- 2 Ripe Bananas
- 2 cups Kodiak Frontier Oat Pancake Mix
- 3/4 cup milk
- 1/2 cup brown sugar can sub coconut sugar
- 1/4 cup melted butter
Crumble Topping
- 2 tbsp brown sugar
- 1/4 cup rolled oats
- 1/2 tsp cinnamon
- 2 tbsp cold butter
Instructions
- Preheat oven to 350 degrees.
- Add bananas to a mixing bowl and mash.
- Add pancake mix, milk, brown sugar, and butter. Mix until combined.
- Add all crumble ingredients to a small bowl and mix with your hands to combine.
- Spray muffin pan with cooking spray or line with muffin liners.
- Add batter to muffin pan filling about 3/4 of the way.
- Sprinkle crumble on top of each muffin.
- Bake at 350 degrees for 16-18 minutes.
