
Ingredients:
Banana: I used 1/2 of a ripe banana.
Oats: Use rolled oats for this – not quick oats!
Egg: adds protein and helps them rise!
Almond Milk: you can sub this for any milk.
Bluberries: I like to use frozen wild blueberries in the batter and for topping. I love how they melt on top of the hot pancakes!
Other: baking powder, vanilla, cinnamon

Blueberry Banana Oat Pancakes

Equipment
- Blender or Food Processor
Ingredients
- 1/2 rip banana
- 1 cup rolled oats
- 1 egg
- 1/4 cup almond milk can sub any milk
- 1 tsp baking powder
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 cup fresh or frozen blueberries plus extra for topping
- maple syrup for topping
Instructions
- Add all ingredients (except blueberries) to blender. Blend until smooth.
- Fold in blueberries.
- Heat a non-stick skillet to medium heat. Spray with cooking oil.
- Cook one pancake at a time for 1-2 minutes on each side. (flip carefully!)
- Top with syrup + extra blueberries and bananas. Enjoy!
